New recipe book: rediscovering traditional Brassica varieties across cultures

The EU-funded BrasExplor project gathered traditional and original recipes featuring cabbages, turnips and other Brassica vegetables from across Europe and North Africa

A unique recipe book that brings together traditional and original recipes featuring cabbages, turnips and other Brassica vegetables from across Europe and North Africa has been recently released. Cabbage and turnip: rediscovering old friends takes us on a culinary journey spanning Algeria, France, Italy and Slovenia and showcases the rich diversity of Brassica vegetables and their uses in recipes that highlight their distinct tastes and textures.

Why focus on cabbages and turnips? These ancient vegetables, native to the Mediterranean basin and part of the Brassicaceae family, have long been cherished for their variety and versatility. Through centuries of cultivation, local farmers have developed an array of landraces, each with unique flavours and culinary uses.

This recipe book was created as part of the European H2020 project ‘Wide exploration of genetic diversity in Brassica species for sustainable crop production (BrasExplor)’.
